There aren’t many carb alternatives in the AIP diet, but pumpkin is one of the tastiest and most versatile. From one pumpkin I made soup, a stew, cookies and I had 2 slices left to enjoy plain, baked in the oven. A small pumpkin was my source of carbohydrates for 4 days.
Iingredients
- 400 grams of baked pumpkin
- 3 tablespoons of coconut oil
- 4 tablespoons of coconut flour
- A teaspoon of cinnamon
- Half a teaspoon of baking soda
- A spoonful of lemon juice
Method of preparation
I had a pumpkin, I cleaned it, cut it into slices and baked it in the oven on baking sheet. I kept 2 slices from which I will make a cream soup tomorrow in the juice I have left from yesterday’s chicken gizzards. From the baked pieces I made cookies and a stew that I will present another day.
The cookies are very easy to make: put all the ingredients in the blender (dissolve the baking soda with lemon juice) and mix until a thick paste comes out that forms nicely. We make balls that we flatten on baking sheet, put in the oven heated to 175 degrees Celsius and leave for 25 minutes. They come out very soft and fluffy, sweet and aromatic.
