CHIA PUDDING WITH BANANAS, PINEAPPLE AND MANGO

Today I had as guests for lunch an older couple with conservative culinary tastes, and when they asked me what I prepared for dessert, I told them it was a surprise, that they had never eaten anything like this before. My friend, who is very honest, said that I am experimenting on them again. In the end, they were delighted. I told you that my friend is very honest, if she didn’t like it she would have told me: “Very good, stop doing it”.

    Ingredients (for 6 servings)

    • 6 tablespoons of chia seeds
    • A can of pineapple compote
    • A mango
    • 2 bananas
    • 2 spoons of honey
    • About a handful of dried cranberries
    • About a handful of frozen raspberries
    • 3 teaspoons carob
    • Half a teaspoon of cinnamon
    • 6 tablespoons of grated coconut

    Method of preparation

    The chia seeds are soaked in a bowl with a cup of water for about 2 hours. After this time it is mixed with honey. Pineapple and peeled mango are blended until they turn into a paste. Pour in three quarters of the chia seeds and blend a little more. Take 6 beautiful cups and place the first layer of the pudding in them. Sprinkle grated coconut on top, in a thin layer. Next comes the second layer of bananas, cinnamon, carob and a spoonful of pineapple compote juice. Blend them too, then add the rest of the chia seeds and blend a little more. Place in cups, repeat the operation with the coconut. The top is made of cranberries, raspberries and 2-3 tablespoons of pineapple compote, blended. Refrigerate for at least an hour, then it can be consumed. It’s super delicious, light and refreshing.
