Hurray! Spring is here! Warm sun, the madness of flowering trees and… lots of greenery. Markets abound with them. Refreshing, full of vitamins and minerals, tasty and cheap. What can we make of them? Many things. Today I thought of a chicken breast stuffed with spinach and wild garlic.
Ingredients for 2 servings
- A large, whole chicken breast
- 300 grams of spinach
- 2 bunches of wild garlic
- A medium onion
- 4 large mushrooms
- An egg
- Salt, pepper, turmeric
Method of preparation
Wash the spinach and wild garlic well, then cut them, not very finely. Chop the mushrooms and onions and then sauté them with a spoonful of oil. After they have tempered, add the greens. They are roasted until they considerably reduce their volume, then they are seasoned with salt, pepper and turmeric. Until this mixture cools down, we prepare the chicken breast, debone it, remove the skin and from its two halves, with a sharp knife, make two strips of meat as wide as possible. In the meantime, the mixture of greens also cooled. We put the egg in it and homogenize it, then spread it evenly over the strips of meat. Now comes the most complicated part: we have to roll these strips or at least fold them. After we have succeeded in this operation, we fix the whole construction with two toothpicks. Place the two pieces in the tray on baking paper and put them in the oven for an hour, the first half at high heat, then reduce the heat towards the end.
