Ever since I threw out a bag of expired food from the freezer (meat, fruit, vegetables, fish) I have vowed not to buy more food than I need for a few days. I no longer put food in the freezer that I can’t eat within 2 weeks at most, except for the nettles that I freeze in the spring. And I kept my word. I heroically resist the days when I open the fridge, freezer or pantry and it seems to me that “there is nothing to eat, I have to go shopping”, but all the shelves are full, or partially full. These days when it seems to me that there is nothing to eat in the house make me be creative, put my mind at work and invent all kinds of dishes, novel and spectacular, without following “beaten” recipes.
Today I had half a zucchini, half a cauliflower, a carrot and a small onion in the fridge and pantry, from which I made a variant of the cauliflower meatballs, but instead of rolling them in flour I wrapped them in some slices of bacon I had left over from the pizza. I still had a spicy and plump sausage and 2 potatoes the size of my fist. I cut the potatoes into rounds and seasoned them with salt and rosemary, and pricked the sausage with a fork. I put everything in the tray on baking paper, put it in the oven for 30 minutes at 180 degrees Celsius, the flavors mingled and a tasty and filling dinner came out. Accompanied by a green spinach salad and a glass of wine it was wow!
