I ran a contest on the blog’s Facebook page with breakfast ideas. Alina Mateescu won with an appetizing plate of pancakes with bananas and apples pan-fried in coconut oil and cinnamon. I promised her I would make that breakfast too. Since I didn’t have apples, I just made the pancakes, innovating the recipe here and there. I have another pancake recipe on the blog, but I thought this was more interesting.
Ingredients:
- 2 eggs
- A well-ripened banana
- 4 tablespoons of ground almonds
- A spoonful of rice flour
- 2 tablespoons of coconut flakes
- 2 tablespoons of coconut butter
- 2 tablespoons of water
- A teaspoon of baking powder
- A pinch of salt
Method of preparation
I put all the ingredients except the water and the rice flour into the smoothie maker, which blended them good, poured the mixture into a bowl, then put the 2 tablespoons of water into the smoothie bowl so I didn’t lose any drop from the composition, I also added the spoonful of rice flour and it turned out to be a slightly viscous dough, from which I poured it with a ladle into the hot pan greased with oil. It turned out 8 palm-sized pancakes, perfect to eat with strawberry jam.
