I had a shopping spree one evening and ordered all kinds of edible grains from a website as if I had turned into a greedy duck that wanted to eat all the grains on the screen. With the black lentils and quinoa of the same color I managed quickly, with the chia still thinking, but the bag of amaranth sat sad and neglected in the pantry. I felt so sorry for her that I started scouring the internet to get her to work. One idea from here, another from beyond, and a shy and trembling pudding came out, only good to be enjoyed as a dessert or breakfast.
Ingredients:
- A cup of amaranth grains
- A spoonful of honey
- An orange
- A banana
- A handful of walnuts
- Other fruits for decoration (optional)
Method of preparation
Soak the amaranth for at least 2 hours, with water and a bit of lemon, then drain the water and boil in 3 cups of water (water measured with the same cup as the amaranth). When it starts to boil, turn down the heat, put the lid on and leave for another 20 minutes. During this time, we make a puree from the orange and banana with the help of the blender, finely chop the walnuts, also with the blender, and chop the fruit for decoration (I put strawberries). After the amaranth has cooled down a bit, mix all the ingredients, not forgetting the honey. I made 4 portions from this amount, 2 of which we ate then, warm, the other 2 the next day, from the refrigerator.
