GLUTEN AND DAIRY FREE STRAWBERRY CAKE

Let’s say our kitchen scale broke, the battery died, or we hit the wall with it, and we want to make a cake. Below I have developed a sponge cake recipe with the ingredients measured in spoons, not in grams, so that we can handle any situation.

    Ingredients:

    • 5 eggs
    • 9 spoons of sugar
    • 12 tablespoons of oil
    • 12 tablespoons of water
    • 12 tablespoons of rice flour
    • 1 teaspoon of baking powder
    • 2 tablespoons of lemon juice
    • 1 teaspoon of vanilla essence or a packet of vanilla sugar
    • A pinch of salt

    We separate the eggs, and we put a pinch of salt on top of the yolks, then mix a little. We let them rest while we whip the egg whites. After the whites have become stiff, we return to the yolks. We put the sugar on them and mix until we get a thick cream. Add the oil spoon by spoon, like mayonnaise. Add water, baking powder, lemon juice, vanilla essence, all at once and mix. We put the flour. After this is also incorporated, we finish triumphantly with the egg whites. To incorporate them, we abandon the mixer and stir nicely with a spoon, gently, so as not to spoil the beauty of the egg white bubbles. I’ve calculated the composition for my lovely new square 24cm non-stick pan with removable sides that I debuted for this cake. If you have a regular tray, it’s best to line it with baking paper, because it sticks a bit. We put strawberry halves nicely placed on the bottom of the tray, then pour the composition over. I’m telling you this theoretically, because I first poured the composition and then put the strawberries, which of course desperately drowned in the batter until they reached the bottom of the pan. So it’s best to spare them the pain and put them straight on the bottom. We put the pan in the oven heated to 175 degrees Celsius and keep it for about an hour or until it passes the toothpick test. We don’t rush like savages to eat it hot, we let it cool, take it out of the pan and turn it upside down, so that we have the strawberries on top. We cut it nicely, take pictures and brag about what an extraordinary cake we made.
