GREEN BANANA CHIPS

Have you ever eaten green bananas? They are also called plantain or cooking bananas. They visually resemble the bananas we are used to, but they have a different texture, they have a very hard skin, like the bark of a tree (I almost broke my nail when I rushed to peel it, fooled by its good banana appearance) , and the flesh is dense, starchy. It can be sliced very thin without fear of tearing. They’re not expensive, I paid 3 lei for one, it’s very filling, one piece fills you up. It can be prepared in many ways, but I first sliced it, fried the pieces in coconut oil, removed them to a plate and sprinkled them with salt, garlic powder and rosemary powder. I ate them with a salad, like french fries, which they taste very similar to. Green bananas are a form of starch allowed in the AIP (autoimmune) diet, in moderation of course.
