GLUTEN AND DAIRY FREE ONION AND CAULIFLOWER QUICHE

I was so excited about the plant based cheese that I thought I’d put it to work in a savory quiche. It turned out to be a delicacy, tasty, fine, seasoned simply, only with salt and pepper.
Clean and wash the onion, then cut it julienne, cut the cauliflower into the smallest florets. Heat the coconut oil, add the onion, reduce the heat, and after a minute add the cauliflower florets. Leave for a few minutes, then season with salt and pepper. When the onion has become translucent and soft, turn off the heat. Beat the eggs with salt, pepper and shredded plant based cheese. We pour the onion and cauliflower mixture into the pre-baked crust, and on top the beaten eggs with cheese and put in the oven heated to 200 degrees Celsius for 15 minutes, then reduce the temperature to 170 degrees and leave for another 20 minutes.
