I made guacamole and didn’t feel like eating it on slices of tomato, cucumber or bell pepper. I didn’t have the time or mood to make bread, so I thought I’d whip up some flat buns. And because I was feeling creative, I decided to make them with green olives. From the amounts below, 6 flat buns came out.
Ingredients:
- 150 grams of millet flour
- 150 grams of chickpea flour
- One tablespoon of psyllium bran soaked in 50 ml of water
- An egg
- A 7 gram packet of dry yeast
- Half a teaspoon of salt
- 7-8 green olives, finely chopped
- A spoonful of flax seeds
- 100 ml of warm water
Method of preparation
Mix the flour, yeast, salt and olives in a bowl. Separately, in another bowl, we have the soaked psyllium bran on top of which we put the egg, water and flax seeds and mix well. We put this wet mixture on top of the dry one from before and make a hard dough that we leave to rise in a warm place and covered with a towel for about half an hour. After this interval, we form the flat buns, about one cm thick, and put them in the preheated oven, on high heat, nicely placed on baking paper, about 30-40 minutes, it depends on each one’s oven. They will not rise spectacularly, they are flat buns, not bread.
