We, Romanians, have some food addictions. Sarmale, cozonac, zacusca… “How can I not make cozonac for Christmas?!” “How can I not fill my pantry with jars of zacusca with half a kilo of oil in each jar?!” Starting from the idea of zacusca, I recreated its taste with light, simple, cheap ingredients.
Ingredients:
- 2 carrots
- A piece of leek
- A large clove of garlic
- A teaspoon of curry powder (can be replaced with turmeric for AIP)
- 3 tablespoons of coconut oil
- Salt
Method of preparation
We clean and wash the carrots and leeks, then cut them into not very small pieces. Crush the clove of garlic. We heat the coconut oil in a pan, then put the carrots, leeks, garlic, mix well, put the fire on low and put the lid on. Leave until soft, stirring from time to time. Add the curry powder, leave for another minute or two, turn off the heat and let it cool with the lid on. Pour everything into the blender, add a few tablespoons of water and start mixing until everything becomes a paste. Season with salt. If needed, add a spoonful of water from time to time. Put the obtained paste in a casserole with a lid and refrigerate. After it cools, it will harden, thanks to the coconut oil, and we will be able to spread it nicely on bread or slices of cucumber or pepper. My casual tasters told me it tastes like zacusca, but lighter, without the excess oil.
