MULTIFUNCTIONAL ALMOND PASTE

by Oana

While I was on the AIP diet I completely gave up sugar and sweeteners. It was good for me, I lost weight, but the sweet taste has its role and should not be given up for life, but only used in moderation. So I’m always looking for ways to incorporate sweet into my diet without too much sugar. Fruit also contains sugar, if we can eat it, but I don’t get along very well with it, my gut protests intensely when I eat fruit. I tolerate dates, so I came up with an idea of date and almond paste that can be used as a sweetener in several dishes.

    Ingredients

    • 100 grams of almonds soaked for 12 hours, then peeled (optional)
    • A handful of dates soaked for 2-3 hours
    • 2 tablespoons of coconut oil
    • ½ teaspoon of cinnamon
    • A pinch of salt
    • A pinch of teaspoon of chilli powder

I mixed all the ingredients in the blender together with 100 grams of water and mixed until I got a thick paste that I divided into 3: one part I used as a pancake filling, one part I mixed with cashews yogurt and I ate it like that, and to the last part I added water and mixed it thus obtaining a very thin paste that I put in the freezer in the form of ice cubes that I use to sweeten and to cool the tea or chicory cold coffee. This paste can also be used to sweeten and spice up classic coffee, a teaspoon of it adds flavor to your morning coffee.
